The filling has to spread completely to the sides of the pan. Try making the filling slightly higher at the edges to keep the top gelatin layer from seeping. I tried this once before, but it didn't seem to catch anything.

I also had the same issue as Lori, I poured the gelatin layer over the top & set it in the fridge overnight. I came to check on it the next morning & didn't see a gelatin layer, thought maybe it was absorbed into the cake! Found out later it had somehow escaped over the side & through the bottom of my spring form pan & was on my refrigerator shelf :) Even there, the gelatin was still quite liquidy.

Anxious to try this recipe again for Cinco de Mayo! :)Unknownhttps://www.blogger.com/profile/14264917575644523831noreply@blogger.comtag:blogger.com,1999:blog-4630401171499916202.post-26681856456686306442013-01-04T17:11:49.329-06:002013-01-04T17:11:49.329-06:00I'll give it a try Nicole, thanks...:0))I'll give it a try Nicole, thanks...:0))cakebaker_cakemakerhttps://www.blogger.com/profile/16124227611805416677noreply@blogger.comtag:blogger.com,1999:blog-4630401171499916202.post-61116215965210476532013-01-04T12:43:46.691-06:002013-01-04T12:43:46.691-06:00You could try mixing equal parts water, granulated...You could try mixing equal parts water, granulated sugar, freshly squeezed lime juice, and freshly squeezed lemon juice.Nicolehttps://www.blogger.com/profile/05525851511177214027noreply@blogger.comtag:blogger.com,1999:blog-4630401171499916202.post-27577021122266301772013-01-04T08:37:07.796-06:002013-01-04T08:37:07.796-06:00I would just love to make this but am in Australia...I would just love to make this but am in Australia and can't buy Margarita mix...what do you think I could substitute in it's place?cakebaker_cakemakerhttps://www.blogger.com/profile/16124227611805416677noreply@blogger.comtag:blogger.com,1999:blog-4630401171499916202.post-74827382897835311942012-09-02T11:29:42.277-05:002012-09-02T11:29:42.277-05:00The alcohol is cooked out in the gelatin, but if y...The alcohol is cooked out in the gelatin, but if you did want to remove it completely you would need to make up for the loss of liquid by adding more margarita mix.Nicolehttps://www.blogger.com/profile/05525851511177214027noreply@blogger.comtag:blogger.com,1999:blog-4630401171499916202.post-25216243601435558572012-09-02T08:34:00.874-05:002012-09-02T08:34:00.874-05:00This looks delish!
