My name is Nicole and I am The Galley Gourmet.

Why Galley?   Because I love to cook and bake all things sweet and savory out of my galley kitchen for my husband and our 3 children  in Northern Illinois.  
Why Gourmet?  Because I take great pleasure in all things food.  You name it-- I love to eat, cook, bake, grow, buy, and most recently, attempt to photograph.  One of my greatest and daily pleasures is having my children walk home from school or my husband come home after a long day of work and immediately be hit with intoxicating aromas wafting from the kitchen.   That smell, that love, that anticipation of a delicious snack or comforting meal that is prepared by someone who loves you just melts all the day’s worries away.  Food, it’s what brings us all together. Whether you are family, friend or a fellow blogger, food keeps us connected.  So here I am, keeping us all connected, creating recipes and memories one spoonful of sugar and a pinch of salt at a time.

    I just had to write to let you know how much I enjoy the Galley Gourmet. Your pictures are beautiful; your recipes are realistic and wholesome. Thank you very much for all the time and effort that you put into this. I haven't tried as many recipes as I would like to......but....there are many on my waiting list....just waiting for the right time to go for it.

  10. Hi Nicole. I just found your blog. i love it and your food sounds sooo good. cant wait to try them. i must ask, where in Northern Illinois? I live in Las Vegas but grew up in Northern Illinois. Prophetstown to be exact. no stoplight town so I was just curious. thanks for your yummy blog!

    I've just been drooling over your Potato Boursin Fritata, and had to write to ask you -- how in the world do you take such gorgeous photos of your food? I know the lighting is important, but what kind of camera and lense are you using? Thanks for the mouth watering photos with your incredible recipes!

    Thank you! Lighting is important and I use natural light as much as I can. The camera I use is a Canon EOS Rebel T2i and the lens I use is a 50mm 1.4. During the winter, lighting gets a little tricky, especially at dinner time, so I do have a Canon Speedlite 430 EX11 to help out with low lighting.

  28. I was referred to your blog by your cornhole, uh I mean bag champion partner Ken. I definitely like your spin on the burger with the bacon grease. I also keep all of my bacon grease in the fridge and use it to cook. I look forward to checking out and trying more of your recipes.

    I found your blog a few weeks ago and have been enjoying the posts. Tonight, I finally had some time to sift through your earlier posts. Your photos are beautiful! I struggle with a very long and challenging learning curve when it comes to photographing the food for my blog, so I highly admire your culinary talent as well as your photography skill. I have made several of your recipes--each one a delight! Thank you for sharing your recipes.

  32. Hi! Love your blog, I made the Baked Cheese Blintzes with Fresh Blueberry Sauce SOOOOOO GOOD!!!

    My mother-in-law wants me to make a Deep dish Chocolate Silk Pie, do you have any suggestions for a recipe? I can't find one anywhere!

  36. Hello Nicole, I have just found your blog and absolutely fell in love with it! You have some great recipes. I grew up in New Orleans and southwest Louisiana. I was looking at the Butterscotch Cake and was just fascinated! I am going to make it this week end with a little twist but the idea was fantastic. I will send you a picture and the changes. I don't eat butterscotch so I am looking forward to the challenge I just want to make you proud. So nice to meet you!

  39. 11 years later and I still frequently refer to your blog for recipes! Thanks for leaving this up here for this long for us to refer back to! I have been making your spiced apple coffee cake for years and recently had a batch of it turn out quite dense compared to normal. I'm wondering what may have caused that? I used an organic flour..but everything else was pretty well the same. Would it be that I need new baking powder?

    1. Oh, thank you so much! I an still here and slowly getting back into the swing of these. Things have changed so much with various blogging tools. I feel like I am starting all over again:). As far as the dense cake, yes it could be the baking powder, but it could also be the type of organic flour. The higher the protein level, the more moisture it will absorb.
