What to go to for a crunchy side when you are just kind of potatoed out?  Thanks to my mother, I found the answer a while back with these delightfully delicious sweet potato chips or strips, as I like to call them.  They are easy to make and can even be made ahead of time.  Just store them in a plastic bag in a cool, dry place after they have cooled completely.  And the utility of these sweet and salty wonders does not stop with side duty to a burger or sandwich.  They make for a great appetizer and are fantastic in the role of bar food.  We love the lime salt on them, but you can use plain salt or you can certainly come up with your own flavor combination to try.


Sweet Potato Chips with Lime Salt
makes about 200 chips

1 1/2 teaspoons finely grated lime zest
1 Tablespoon Kosher salt
2 large sweet potatoes (about 1 1/2 pounds total)
Vegetable oil for frying

In a small bowl, stir together lime zest and salt; set aside.

Peel potatoes.  Using a vegetable peeler, shave as many long strips as possible from the potatoes, turning the potato as you go.

Heat 2 inches of oil in a 3 to 4-quart wide, heavy bottom saucepan over moderately high heat until it registers 350º F on a thermometer.  Fry strips in 6 batches, stirring frequently, until chips are lightly browned and bubbling stops, about 1-2 minutes.  Transfer chips to  paper towels to drain and sprinkle with lime salt.  Enjoy!

    I love homemade sweet potato chips - and we also use lime zest to top them! I've found that is helpful to have a REALLY good vegetable peeler. Actually made these for a party once and ended up with a huge blister on my finger. On a recommendation from a friend, I bought a Cutco (think that is the brand) peeler and it made a big difference. You really inspire me with your meal plans - the only problem is I want the recipes for EVERYTHING! :) ~Brenda M.

    1. Thank you, Brenda! When I peel the sweet potato strips, I use an OXO vegetable peeler. I also hold it in my left hand and peel towards me (opposite of what you should do, but it gives me better control).

  5. I love to see this layered sweet potatoes. Actually have ever seen this cut before in the internet but they come with different cooking technique and taste too. I think this is the best idea to have sweet potato chips. And to cut the potatoes with peeler is the best idea.

  6. I just made these and they were delicious! I have always tried making chips by slicing - and you can never get them thin enough, not even with a mandolin. These were perfectly thin!
