Ham, Cheddar, Apple Butter Tartine

Remember the apple butter?  Well, I wanted to share with you one of my most favorite ways to use it.  It is this delicious tartine that is an absolute must in my house each Fall.

A tartine is simply the French term for open-faced sandwich.  And in this version, I use Black Forest ham, extra-sharp white cheddar cheese, Dijon mustard, and of course, apple butter.  Just layer the ingredients and place it under the broil until the cheese melts and then you'll have yourself a delicious lunch.  I also enjoy this with a nice salad for dinner and I have even made it in mini form for an appetizer.  I do hope you'll give it a try!

Ham, Cheddar and Apple Butter Tartine
serves 6

6 1/2 inch thick slices of good country bread
2 tablespoons of unsalted butter, softened
1/3 cup apple butter, homemade or store bought
2 tablespoons Dijon mustard
2 tablespoons grainy Dijon mustard
1 1/2 lbs Black Forest Ham, thinly sliced (I use Boar's Head)
12 oz extra sharp white cheddar cheese, sliced
2 tablespoons chopped fresh chives

Place oven rack to highest position and preheat the broiler.  In a small bowl combine the mustards and set aside.

Butter 1 side of each slice of bread with the butter.  Place on a baking sheet.  Broil until the bread begins to brown, about 2 minutes.  Remove from the oven and spread the mustard mixture evenly over the toasted bread.  Then spread the apple butter evenly over the mustard.  Layer the ham and the top with the cheese slices.  Return the baking sheet to the oven and broil until the cheese melts and begins to brown in some spots, about 2 minutes.  Remove from the oven and sprinkle with chives.  Serve immediately.  Enjoy!

  2. We are having our FIRST frosty Fall morning here in Florida. This is my favorite time of year and I was looking for a special "cozy" breakfast treat to go with our European coffee we like. This recipe is delicious (especially since I had left over aged Cabot cheddar you recommended from your mac n' cheese!) My husband and I loved this! Even my 3 yr old daughter said, "YUM!!!" Thanks making my perfect Fall morning even better!
